Why is guitar music transposed up the octave instead of being written in B Clef?

Its not transposed. Middle C (C4) is in the middle of the guitar (fret 3 on A or 8 on E), and it wouldnt make sense if a majority of the guitar is above it [b clef] and putting it into treble range. so i dont get what your asking.
